Made from the finest durum wheat semolina, sourced from Tuscan and Italian grains milled in the province of Florence, our pasta is crafted using bronze-die extrusion. This technique gives the pasta a rough texture, allowing it to perfectly absorb your favorite sauces. Every bite becomes an explosion of flavor.
The combination of tradition, passion, patience, and the best technologies gives rise to this pasta which is so delicious that it can be enjoyed even with just a drizzle of olive oil. Our dream is to bring Italy to your table, sharing the authenticity of its finest delicacies. Some dreams come true like magic, while others require ingenuity and careful planning. Import restrictions limit the arrival of certain cured meats from Italy to the United States, but we knew we could find a solution without ever compromising the quality of our products.
Our Prosciutto Toscano DOP will be imported directly from Italy. As for Finocchiona, Guanciale, and Salame Toscano, we’ve partnered with skilled Tuscan artisans who now live and work in the United States. Using premium Italian ingredients and pork raised in the USA, our local production ensures you can enjoy the true flavors of Italy.
By overcoming import limitations, we preserve the authenticity, expertise, and excellence that define our salumi. Whether it’s a DOP Prosciutto directly imported from Italy or a salume crafted with the same dedication here in the United States, our vision remains unchanged and follows us wherever we go: to share the very best of our land and our heritage, honoring tradition while embracing innovation.

As red as fire, as red as the heart. Red is the colour of passion, and for those who love cooking, it’s the colour of homemade tomato sauce. When time is tight, life gets hectic, or you’re far away from home and menus are written in an unknown language, that’s when you crave for the simplest, yummiest, and most indispensable of condiments. The world has no language barriers when on the table there’s a plate of pasta with tomato sauce, a pizza, or ketchup, or French fries to dip into ketchup. Ask any Italian, and they’ll have at least one special memory accompanied by the sweet smell of red tomato passata.

We make our sauces and passata using ripe tomatoes picked from the best plants in mid-August. Tomatoes are hand-picked one by one and processed locally, adding only a few 100% natural ingredients to deliver that same authentic smell.

My mamma simply cannot set the table without finding a spot for the bottle of olive oil. She tried many different kinds over the years before she found the perfect one. Grandmother used to tell us to mix a few drops of olive oil with honey if we had a sore throat. We could safely say that our entire lives and our memories are drizzled with olive oil, the very same olive oil that is in the majority of our favourite dishes. It could take hours to list all of its properties. Olive oil prevents and cures. Just a few of its characteristics include protection for the stomach and the intestines as well as the nervous system. It can prevent heart attacks, and it is an elixir for your skin and hair. This Mediterranean diet staple has historically been used by many cultures as more than just an ingredient. For Catholics, olive oil is a symbol of peace, the ancient Romans used it as a bargaining chip, and for athletes competing at the Parthenon it was a prize that was just as valuable as gold. Epic poems and philosophers' writings talk about olive oil. Homer calls it "liquid gold". Over the centuries, olive oil has become an essential element in our culture and on our table.

Where nature is abundant, its fruits are precious and unique. In the hills of Maremma, the olive trees are centuries old, the climate is mild, and thermal waters flow like a lifeblood beneath the ground. Here, artificial flavors, preservatives, or colorings aren't needed: the earth and the sky, the sun and the winds, provide everything we need.
